When making lunch or any meal in a hurry,healthy onepot meals are my favorite, especially this veggie chicken porridge. Sharing this recipe with you all- ๐Ingredients:(3 servings) Rice/oats/quinoa/any millet grain- 50g Chicken/soy granules- 50g small cubes Seasonal vegetables- 2 cups full (I've added carrots, green beans, peas, cauliflower) Onion- 1 small (optional) Oil/butter -1tsp Whole garam masala- 1tsp coarsely ground Ginger paste- 1tbsp Sugar- 1/2 tsp (optional) Salt, pepper, lemon juice for marinating chicken (marinate for 30 minutes) Coriander leaves- 1 handful Water-3 cups ๐ฉโ๐ณMethod- In a pressure cooker add the oil/butter, add garam masala, onion & fry for a minute. Add the marinated chicken or soy cubes, fry for 2 min. Add the vegetables, salt, ginger paste, sugar & fry well. Now add the rice/grain of choice & water. Now cover the lid & cook till 2 whistles (1 whistle is enough if you don't prefer it soft). It's perfect as a weight loss meal & for all ages๐ค
