Spinach mushroom curry with rice ( added a little amla for tang 😋)
Spinach is extremely healthy and linked to numerous health benefits. It has been shown to improve oxidative stress, eye health, and blood pressure. Every variety of mushrooms has a rich antioxidant profile, excellen vegetarian source of Vitamin D, and also contains protein and fibre. Regular consumption of mushrooms can help lower cholesterol, aids weight loss, might protect against cancers, and helps with healthy skin ageing.
steam spinach until tender, squeeze excess liquid and puree the spinach once it cools a bit, then set aside.
Make tomatoe puree as well and set aside (you can add a little raw amla if you like).
Sautee mushrooms in some butter separately in some butter and keep it aside.
Into a frying pan, add oil/ghee of your choice and add cumin seeds, asafoetida, garlic cloves,raw turmeric, ginger,green Chilli and saute a little. Add onion and cook it till golden. Cut and add a tomato- cook it till they are a bit tender. Add tomatoes/amla puree, chilli flakes, salt, dhania powder and cook properly till oil separates. Add spinach puree and mushrooms and cook for another 3-4mins. Enjoy with rice or roti :)
