This is a very simple & quick vegetable dal khichdi I had today for dinner, approximately 4 servings. This has:- •1 cup of unpolished white rice •1/2 cup of masoor dal •1/2 cup of moong dal •2 cups of seasonal vegetables (carrots, French beans, broad beans, radishes, cauliflower, spinach, peas, coriander leaves, potatoes) •1 big tomato •1 medium onion •1.5 tsp of ginger garlic paste •1/2 cup spinach •1/2 cup of coriander leaves •2tsp of rice bran oil •dry spices (turmeric powder, cumin seed powder, red chilli powder) •Salt & sugar •lemon juice at the end All it took was 4 whistles in the pressure cooker. The rice here can be easily replaced by brown rice/oats/quinoa/millets etc.
