This salad is so refreshing & wholesome that I end up making it once or twice a week in the hot summer months.... It's a complete meal sometimes. Do try it out & share your experience too You need : 1 cup sliced orange carrots 1/2 cup sliced raw papaya 1/2 cup shredded zucchini 1/2 cup sliced onions 2 tsps finely chopped capsicum 2 tsps finely chopped mint leaves 1 tsp sesame seeds 2 tsps roasted peanuts 2-3 peppercorns ( coarsely crushed) 2 tsps lemon juice Salt to taste Just toss together all ingredients n chill. Add the peanuts just before serving for the crunchiness.
