blue pea fried rice
A delicious and vibrant combination of blue peas & rice - a perfect monsoon delight!

15 Ingredients
1/2 cup diced baby corn
1/2 red bell pepper, finely chopped
1/2 yellow bell pepper, finely chopped
1/2 cup finely chopped celery
1/2 cup finely chopped mushroom (optional)
1/2 cup finely chopped paneer/tofu/boiled chicken cubes (as per taste)
for garnishing: 1 cup boiled peas, 1 tsp oil, 1 tsp finely chopped garlic
salt & pepper to taste
1 cup cooked rice (use the blue pea flower water mentioned below to get the desired colour)
1 cup blue pea flower water (steep 1 cup of blue pea flowers in 1 cup boiling water for 10 minutes, strain & cool)
2 tbsps vegetable oil
2 tbsps finely chopped garlic
1 tbsp finely chopped ginger
1 cup finely chopped spring onions
1 cup finely chopped carrots
Heat 2 Tbsps oil in a kadai. Add ginger & garlic and saute for a minute.
Once light brown, add all the vegetables one after another (keep aside spring onions).
Stir fry for 5-10 minutes until veggies are tender but not overcooked.
Add a few tsp of water if required.
Now add the paneer/tofu/ boiled chicken & cook for another few seconds.
Once all ingredients are well cooked, add the boiled rice, salt, pepper & finally the spring onions.
Stir well to mix everything together.
Transfer into a serving bowl.
For garnishing: Heat the 1 tsp oil & fry the garlic. Add the boiled peas & mix together.
Now garnish the rice with the peas & garlic!
