1 tsp crumbled low fat cottage cheese
200g chicken
1 handful mix lettuce
1/2 cucumber
1/4 ripe avocado
1 tbsp hummus
salt and pepper as taste
Boil and shred chicken and keep aside.
Wash the leaves and roughly tear them in a bowl. Add in chopped cucumber and avocado.
Mix the shredded chicken and add the hummus.
Add salt and pepper as per taste.
Give this a good mix and garnish with crumbled cottage cheese.
