chickpea salad
An easy to make protein packed salad that will leave you feeling satisfied for hours.

12 Ingredients
2 tsp finely chopped coriander
salt to taste
1/2 cup cherry tomatoes or 1 regular tomato, finely chopped
30 grams boiled white chickpeas
1 tsp extra virgin olive oil
1-2 pods of crushed garlic
1/2 tsp black pepper
1 tsp lemon juice
1/2 english cucumber, finely chopped
1/4th medium onion, thinly sliced
1/2 avocado, chopped
5-6 coarsely crushed walnuts
Combine the dressing ingredients in a small bowl: olive oil, lemon juice, garlic, salt, and pepper, and whisk to combine (or shake them together in a small mason jar).
Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste, and toss to coat.
