chilled tomato & basil soup

7 Ingredients
5 medium-sized ripe tomatoes
2 cloves of garlic chopped
1 handful of basil leaves
1/2 tsp oregano
1 cup water
1 tsp oil
salt & pepper to taste
Make 2 cuts on the tomatoes, one vertical & one horizontal.
In a hollow utensil boil water. Turn off the gas & add in the tomatoes for 10 minutes.
Now take the tomatoes out of the water & peel off the skin.
In a blender blend these tomatoes until smooth.
In a pan add the oil & chopped garlic, and saute for a minute.
Add the tomato puree & boil for 5-10 minutes.
Add salt, pepper & oregano and mix well. Pour in 1 cup water.
Garnish with basil leaves, and boil for another 5 minutes.
Turn off the gas.
Cool the soup well & chill in the fridge for an hour before serving.
