2 skinned chicken breasts (organic if possible)
1 tbsp garlic infused olive oil
1/4 tsp chilli powder
1/4 tsp ground turmeric
1.5 tbsp fresh lime juice
1 tbsp melted butter
salt and pepper to taste
Put the oil in a mixing bowl and add lime juice, chilli powder, turmeric, garlic, salt and pepper
Stir to blend well and add the chicken pieces.
Turn them in the marinade to coat well. Cover and set aside until ready to cook. Optional marinade: refrigerate the chicken overnight, or up to 24 hours in a sealed container.
Cook under the grill, turning about every 2 to 3 minutes until done. Remove the chicken and brush with the butter
Chop and top up a salad, or with veggies of your choice (around 3/4th of the plate should be veggies)
