1 tablespoon ghee
½ cup jaggery powder or grated jaggery
2 tablespoons water
1 to 1.25 cups whole wheat flour
1 teaspoon fennel seeds (saunf)
3 tablespoons desiccated coconut
1/2 tsp ghee for roasting
In a bowl, mix the jaggery powder/ grated jaggery in 2 tablespoons water.
Keep aside for 30 to 45 minutes or till all the jaggery dissolves.
Stir this mixture well. Strain & keep this jaggery solution aside.
In another mixing bowl, take the wheat flour.
Add the saunf and 1 tablespoon ghee.
Next, add in the jaggery solution and desiccated coconut and mix well.
Now knead into a soft dough. Note, the dough may be sticky due to the jaggery solution. If it is too sticky, you can add in a little more wheat flour & knead well.
Now take a zip lock bag. Spread a little ghee on it.
Take a small ball of the dough and place it on the zip lock bag.
With a rolling pin, roll to a small roti similar to a poori size, but slightly thick (like a paratha).
Now gently remove the roti from the zip lock bag and place it on a hot tawa.
Keep the flame to low or low-medium and begin to roast the jaggery roti.
When one side is lightly brown, flip it over
Spread 1/2 teaspoon ghee on the top.
With a spatula press the edges as well as the center so that the roti gets cooked evenly.
Flip a couple of times to get an evenly cooked and roasted jaggery roti.
