2 tbsp ghee
1 cup water
8 cashews, halved
5 almonds, chopped
2 tsp raisins
2 tsp dry coconut
½ cup basmati rice (soaked for 30 minutes)
½ cup sugar
2 tsp chironjee (for garnish)
Heat ghee in a large kadhai. Now roast the cashews, almonds, raisins, and dry coconut in it.
Roast on a low flame till they turn light brown. Keep aside.
Now mix the saffron well in 1 cup water.
Add the soaked rice and stir once.
Cover it and cook on medium heat for 10 minutes. Mix well. Keep in mind that the rice is half-cooked.
Now add ½ cup sugar, roasted dry fruits along with 1.5 Tbsp ghee. Mix well. Ensure that the sugar melts completely. Cover & cook for 5 minutes.
Keep stirring in between to prevent the rice from burning.
Cook till the rice is fully cooked (do not overcook the rice).
Garnish the sweet rice with chopped chironjee and serve hot.
