makhana dosa
A crispy Navratri delight, blending makhana powder with amaranth flour, served with zesty coriander chutney!

1 tsp black pepper powder
1 tsp ghee
5-6 curry leaves
1 cup makhanas (roasted and powdered)
1 cup amaranth flour / sama rice (roasted and powdered)
water - just enough to soak the ingredients
rock salt - to taste
2 tsp ginger & green chilli paste
Mix the makhana powder, curry leaves, sama rice powder/Amaranth flour in a bowl.
Add just enough water to soak these ingredients.
Let it soak well for 30 minutes.
Grind all of this together and make a smooth, lump-free batter.
Add water if needed to make the batter dosa - consistency
Add rock salt, pepper, and ginger & green chili paste.
Heat a tawa/pan.
Spread chilla/dosa and cook on medium flame. Add 1/2 tsp ghee.
Flip to the other side and pour another 1/2 tsp ghee.
When it is golden brown from both sides, it is ready to serve.
Enjoy with coriander chutney.
