methi aloo sabzi
A classic Indian side dish made with soft, tender potatoes and flavorful fenugreek leaves.

9 Ingredients
3.5 to 4 cups methi leaves (finely chopped & washed well 2-3 times)
3 medium sized potatoes (diced & soaked in water)
1 finely chopped green chilli (optional)
1.5 tbsps mustard oil
pinch of asafoetida (hing)
salt - to taste
1/4 tsp jeera powder
1/4 tsp dhaniya powder
½ tsp turmeric powder
Heat the oil in a kadai.
Add the potatoes. Sauté for 3-4 minutes on medium flame. Stir occasionally.
Add the green chilli, turmeric powder, and hing & stir.
Now add the methi leaves & mix well.
Add salt. Stir and cook for a couple of minutes uncovered on medium flame.
When the methi begins to leave its water, reduce the heat to low and cook for another 8 - 10 minutes.
Cook well until the water dries completely & the potatoes are cooked.
Finally, sprinkle jeera & dhania powder
