Ingredients

for cashew-almond paste: 5 cashewnuts, 5 almonds, 3-4 tablespoons warm water

for onion paste: 1 medium onion - sliced, ½ inch piece ginger - chopped, 1 clove garlic - chopped, 1 green chilly - slit (optional), ¾ cup water

1 bay leaf

1.5 teaspoon red chili powder (optional)

1 cup methi leaves, plucked, measured, washed and then finely chopped

salt to taste

¼ teaspoon garam masala (optional)

¼ teaspoon haldi powder

¼ teaspoon garam masala (optionala1 teaspoon kasoori methi (dried fenugreek leaves), crushed)

200 grams paneer cut lengthwise or cubes

2 tablespoons of malai (cream)

2 cloves

½ inch cinnamon stick

1 tablespoon oil

½ cup water

1 teaspoon dhaniya powder

Method

For the cashew-almond paste: Soak almonds and cashews in warm water for 10-15 minutes. Blend it into a smooth paste.

For the onion paste: Transfer all the onion paste ingredients into a pan. Turn on the flame on medium heat. Let it simmer for 15-20 minutes or till the onions turn soft. Allow it to cool. down a bit. Puree into a smooth paste.

Making methi malai paneer recipe: Now heat the oil in a pan on medium heat. Once hot add bay leaf, cinnamon stick, and cloves. Saute for a minute.

Then mix in prepared onion paste, and sprinkle some salt.

Cook it till all the moisture is evaporated and it starts to leave the sides of the pan. Do stir in between.

Add red chili (optional) powder, turmeric powder, and coriander powder. Mix well and cook for a minute.

Add chopped methi leaves. Mix well and cook for a minute.

Add water. Let it simmer for 3-4 minutes, so the methi leaves get cooked.

Stir in the prepared cashew-almond paste. bring to a simmer.

Add garam masala and crushed kasoori methi. Mix well.

Mix in paneer pieces. let it simmer for 2-3 minutes.

Lastly, add heavy cream/malai.

Mix well, let it simmer for 3-4 minutes.

Turn off the stove heat.
