mutter paneer/tofu
A classic combination of tender green peas with soft paneer cubes, cooked in a flavorful tomato-based gravy infused with aromatic spices.

150 grams paneer/ tofu (cubed)
1 cup fresh peas
1 large tomato, pureed
1 tsp ginger, finely chopped
4 pods garlic, crushed
1 tsp chaar magaj (soaked for 2-3 hours)
2 tbsps fresh coriander, finely chopped
salt to taste
1/2 tsp haldi powder
1/2 tsp red chilli powder (optional)
1/2 tsp jeera seeds
1 tsp dhaniya powder
1 large onion, finely chopped
2 tsps oil
1 green chilli, finely chopped
1/2 tsp jeera powder
Heat the oil in a pressure cooker
Add the jeera seeds & allow them to splutter, ensuring that they do not get overdone.
Now add the ginger followed by the garlic & sautee for 30 seconds.
Then add the onion & cook until translucent.
Now add the tomato puree & chaar magaj & cook for 3-4 minutes until the masala begins to thicken.
Add the haldi powder, red chilli powder & green chilli.
Sautee for another 2-3 minutes.
Add salt to taste.
Cook until the oil starts to leave the sides of the cooker.
Now add the paneer/ tofu & cook for another 5 minutes, stirring occasionally so that the paneer/ tofu does not crumble.
Add 2 cups water & close the lid of the cooker.
Give 3 whistles on high & 1 whistle on low flame.
Once the pressure of the cooker is released, add the dhaniya & jeera powder.
Continue to simmer for another 2-3 minutes.
Garnish with fresh coriander.
