11 Ingredients
1/2 medium carrot (halved lengthwise and chopped into large bites)
1/4 sweet potato (sliced into 1/4-inch rounds)
1/4 broccoli (roughly chopped)
1/4 cup red or green cabbage (thinly sliced) - optional
1/4 medium bell pepper (thinly sliced lengthwise)
1/4 small beetroot (sliced into 1/4-inch rounds- large rounds halved)
pinch of black pepper
salt, to taste
1/2 cup chopped cauliflower
1 tsp lemon juice
1/4 tsp red chilli powder (optional)
Preheat the oven to 375 degrees F (190 degrees C) and line two baking sheets with parchment paper.
Boil or steam all the vegetables.
Transfer the boiled/ steamed vegetables to the baking sheet.
Season to taste with salt, pepper & chilli powder and toss to coat.
Bake for a total of 20-30 minutes.
Squeeze some lemon juice on the vegetables & serve.
