for meetha pani: 1 cup tamarind extract, 2 tbsp jaggery, 1 tsp salt, 1 tsp chaat masala, 1 tsp jeera powder, 1/2 tsp black pepper powder, 1/2 tsp red chili powder, pinch of hing, 3 cups of water
for puri filling: 3 big potatoes (boiled), 1/4 cup boiled black chana, 1/4 cup boiled peas, 1 tsp salt, 1 tsp jeera powder, 1 tsp chaat masala, 1/2 tsp black pepper powder, 1/2 tsp red chili powder, 1/2 lemon, 2 tbsp chopped coriander leaves
for puri: 1 cup rava/semolina, 50 g maida, pinch of salt, 3 tbsp oil, water for kneading
for teekha pani: handful of pudina leaves, handful of coriander leaves, 2 green chilies, 1 inch ginger, 1 tsp salt, 1 tsp chaat masala, 1 tsp jeera powder, pinch of hing, 4 cups of water
To make the puri: Mix all the dry ingredients and the oil & start kneading until the dough turns crumbly.
Now add some water & knead to a soft dough.
Cover the dough for 30 minutes with a clean cloth.
After resting the dough take small coin sized parts from it & roll in the palm of your hands.
Roll out the small balls into small round puris & fry in oil until they turn light brown.
60-65 puris can be made with this dough.
To make teekha pani: In a blender add the pudina, coriander leaves, green chilies & ginger and blend till smooth.
Now in a big bowl add this blended mixture, salt, hing & spices.
Mix with 4 cups of water. Teekha pani is ready.
To make meetha pani: In a big bowl add the tamarind extract, jaggery, salt, hing & spices and mix until well combined.
Add the water & mix. Meetha pani is ready.
To make the puri filling: Mash the boiled potatoes, add the dry spices, salt, peas & black chana mix well.
Add the lemon juice & coriander leaves & mash together in the potato mixture. The filling to add to the puri is ready.
