170 grams of paneer, cut into cubes
rock salt (sendha namak) to taste
½ cup hung curd
1 tsp peanut oil (for marinating)
1 tablespoon barnyard millet (sama ke chawal) flour
½ teaspoon roasted jeera powder
whole spices (2 green cardamom, 1/2 inch cinnamon, 4 cloves, 6 black pepper)
¼ teaspoon black pepper powder
2-3 tbsp peanut oil (for cooking)
1 teaspoon ginger paste or freshly grated or crushed
juice of 1 lemon
Grind the whole spices with a little water to make a paste.
In a bowl, mix the curd, oil, barnyard millet flour, ginger, whole spice paste, lemon juice, and rock salt.
Add the paneer. Coat each piece well with the mixture. Cover it with plastic wrap and let it rest for 1 - 4 hours or even overnight (if prepping ahead of time).
Heat the nonstick pan on medium heat and add 2-3 tsp of oil. Oil should coat the bottom of the pan. Once hot add marinated cubes in a single layer.
When paneer gets a light golden color flip them and cook another side.
Drain off the extra oil.
Serve hot!
