Ingredients

for tikka: 170 grams paneer - cut into cubes, ½ cup red onion cut into 1" pieces, ½ cup capsicum - cut into cubes, ½ cup red pepper - cut into cubes

for tikka: ½ cup greek yogurt or hung curd (1 cup plain yoghurt makes ½ cup hung curd), 1 tsp mustard oil, 1 tsp ginger, freshly grated, 1 tsp garlic paste, 1 tbsp besan, 1 tsp kashmiri red chilli powder(optional)

for tikka: ½ tsp roasted jeera powder, 1 tsp dhaniya powder, ½ tsp garam masala (optional), ¼ tsp haldi powder, 1 tsp chaat masala

for tikka: 1 tsp amchur powder (dried mango powder), ¼ tsp black pepper powder, 1 tsp kasoori methi (dried fenugreek leaves - crushed between your palm before adding), salt to taste, oil for pan frying

for gravy: 1 tsp butter, 2 cloves, 2 green cardamoms, ½" cinnamon stick, 2 cloves garlic - sliced, ½ " ginger - chopped

for gravy: 1.5 cups red onion - chopped, 2 tsp chaar magaj seeds (mix of watermelon, muskmelon, pumpkin & cucumber seeds), 2 cups tomatoes - chopped, 1 tsp oil, 2 tsp red chilli powder(optional), 1.5 tsp dhaniya powder

for gravy: 1 tsp jeera powder, ¼ tsp haldi powder, salt to taste, 1 cup water, 1 tsp kasoori methi, 1 tsp garam masala (optional)

Method

Marinating Paneer: Take greek yoghurt, mustard oil, besan, ginger and garlic, all the spice powders and salt. Mix everything well.

Add paneer, onion and pepper cubes. Mix well so the marinade is coated on every piece. Cover it with plastic wrap and let it rest for 1- 4 hours or even overnight (if prepping ahead of time).

Pan-frying (On Stovetop): Heat the nonstick pan on medium heat and add a generous amount of oil. Oil should coat the bottom of the pan. Once hot add marinated cubes in a single layer.

When paneer gets light golden colour flip them and cook another side. Cook the veggies till they are 80% cooked. Remove them to a plate and keep them aside.

Making Paneer Tikka Masala Gravy: Heat the butter in a pan on medium heat.

Add the whole spices (cloves, cardamoms and cinnamon stick). Saute for 30-40 seconds or until you feel the nice aroma of the spices.

Then add ginger and garlic. Saute for a minute.

Add chopped onion and sprinkle a little salt to speed up the process. Cook until the onion becomes soft and translucent.

Add chaar magaj and chopped tomatoes. Mix and cook till tomatoes are soft.

Let the mixture cool down slightly and grind it into a smooth paste.

Heat the oil in the same pan on medium heat.

Add the prepared paste. Mix and cook until it becomes thick and most of the moisture evaporates.

Now add salt, red chilli powder, dhaniya powder, jeera powder and haldi powder. Mix well and cook for a minute.

Now add water and simmer for 5-6 minutes.

Add garam masala and kasoori methi. Crush the kasoori methi between your palms before adding it to release the flavour. Mix well.

Add grilled tikka. Mix and simmer for 1-2 minutes and paneer tikka masala is ready to serve.
