A Konkanese delicacy that combines the refreshing flavor of pineapple, subtly tempered with mustard seeds and curry leaves, and delicately spiced with a coconut-based curry.

12 Ingredients
1 tsp tamarind pulp
1 tsp jaggery
salt to taste
1 tsp haldi powder
10-12 curry leaves
1 tsp mustard seeds
250g pineapple cut into cubes
1 cup shredded coconut
1/4 tsp methi-dana seeds
1/4 tsp hing
2 tsp coconut oil
3 whole red chillies
For coconut paste: Grind the spices - red chilies, tamarind, haldi, mustard seeds & shredded coconut with water.
In a separate vessel, heat the coconut oil. Add the hing, curry leaves & methi dana seeds.
Saute for a few seconds.
Add pineapple cubes/ the hog plums, and saute for another 2-3 minutes on a medium flame.
Add the coconut paste, a little water, and salt to taste.
Stir and cover. Cook on a medium flame for 5-10 minutes until tender
Add the jaggery, mix, and cover. Cook for another minute & then turn off the flame.
Note: In this recipe, pineapple can be substituted by 6-8 hog plums, also called ambade. They need to be peeled & then used.
