1 cup cubed yellow pumpkin

1 medium potato boiled & cubed

2 tsp peanut oil

1/2 tsp cumin seeds

1 slitted green chili (optional)

1 tsp cumin seed powder

1/2 tsp ginger paste

1.5 tbsp sugar

1 tbsp peanuts

rock salt as required

Method

In a kadai first dry roast the peanuts & keep them aside.

Now in the same kadhai add oil, cumin seeds & green chili.

Once heated add the cubed pumpkin pieces & fry for 5-7 minutes.

Now add in the boiled potato pieces. Add in the cumin powder & ginger paste now.

Cook for another 2 minutes or until the raw smell of spices is gone.

Add in the water now & the sugar, salt as well. Stir well.

Cook until the pumpkin is well cooked. Top the pumpkin curry with the roasted peanuts.
