1/2 cup quinoa
1 cup yellow moong dal
1/2 cup chana dal
1/2 cup urad dal
1/2 chopped green chilli
1/2 inch of ginger
1/2 onion, roughly chopped
1/2 cup lauki, grated
1 tbsp oil, as required (for cooking the pancake)
salt as per taste
Soak yellow moong dal, chana dal, urad dal, and quinoa for half an hour and keep them aside.
Blend the soaked dals & quinoa along with green chilli, ginger, onion, lauki, and salt together.
Stir the mixture once, add water, and blend again. Keep adding water in portions, if required, to get a dosa batter consistency.
Heat a flat pan grease it with oil, pour the batter and circle it into a nice pancake. Cook for 2-3 minutes on each side
Serve with coriander chutney.
