1/4 tsp cinnamon powder
1/2 tsp salt
250 grams dried fruits (raisins, sultanas, candied orange peels, candied cherries, figs, dates)
125 grams all-purpose flour (plus 3 tbsp extra for dried fruits)
1/2 tsp fresh ground nutmeg
1/2 tsp ground ginger
1/4 tsp clove powder
125 grams butter
125 grams brown sugar
4 eggs
25 grams almonds (chopped)
25 grams cashewnuts (chopped)
1-2 tbsp sugar caramel or molasses (for a dark color for the cake)
1/2 tsp sodium bicarbonate
1 tsp baking powder
Add the 3 tbsp flour to the dried fruits and keep aside.
Mix in the flour, salt, and spice powders together and keep aside. In a bowl, add brown sugar and butter and beat till nice and creamy.
Add the molasses or the caramel.
Add eggs one at a time, beating well after each addition.
Add the flour along with the spice powders.
Fold in the dried fruits and add the nuts as well.
Preheat oven to 150 degrees C (300 degrees F). Pour the batter into a baking dish lined with parchment paper.
Bake for about 1.5 -2 hours till the skewer inserted in the cake comes out clean. Cool cake completely in the tin itself. Unmould and enjoy!
