vegan banana cupcakes
A light, fluffy and delicious preparation that makes for a perfect guilt-free dessert.

1/4 cup dried fruit
2 tbsp oats
2 tbsp mixed seeds
2 large bananas (about 225g), peeled
4 tbsp vegetable or sunflower oil
4 tbsps jaggery powder
2 cup wheat flour
2 tsp baking powder
2 tsp cinnamon
Heat the oven to 180C/160C
Mash the bananas in a medium bowl with a fork, then mix in the oil and jaggery powder
Add the flour, baking powder, cinnamon and dried fruit and seed mix, mix until well combined
Line a cupcake tray with 10-12 cupcake cases and fill them 3/4 full of the mixture
Sprinkle with the oats and mixed seeds
Bake for 25 mins, or until a skewer inserted into the middle of a muffin comes out clean
Leave to cool on a wire
