A delicious & easy to prepare potato & tomato curry perfect to go with any fasting flatbread.

1 tablespoon ghee
1 green chilli chopped (optional)
2 cups water
rock salt as required
3 medium potatoes boiled
1 cup of chopped tomatoes
½ teaspoon cumin seeds
½ teaspoon ajwain seeds
In a kadhai add ghee, when hot add the cumin & ajwain seeds until they crackle.
Add in the green chili & chopped tomatoes and stir well. Add salt on top & let this simmer.
Add in the boiled chopped potatoes & stir to combine well with the tomato mixture.
Cook for 2 minutes & add the water in.
Cook this in medium heat for 10 minutes or until the water reduces. Keep mashing the potatoes while cooking.
Here add more salt if needed. Serve hot!
