1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 whole egg
1 teaspoon vanilla extract
salt as per taste
1 teaspoon olive oil
2 tbsp oats flour
1 teaspoon jaggery powder
oil for greasing the pan
1/2 tsp cinnamon powder
1/2 zucchini (grated)
5 walnuts (coarsely chopped)
Preheat the oven to 165 degrees Celsius and grease the pan
Sieve the oats flour, salt, baking powder, soda, and cinnamon together in a bowl
Beat the egg, oil, add vanilla extract, and jaggery in a bowl then add sifted ingredients to this mixture and beat well
Stir in zucchini and walnuts and pour the batter into the greased pan
Bake for 40 – 60 minutes and let it cool for a few minutes
Remove the bread from the pan and serve hot
